I’m not an instance owner for Lemmy but a lot of us enjoy hosting different services at home on old/recycled hardware as a hobby or a means to escape big tech.
I personally run a few things like Plex (media), PiHole (adblock), and NextCloud (“cloud” storage).
It’s sustainable as the Fediverse is a decentralized platform, meaning that, if necessary, we can rebuild accounts on a different instance if something happens to our existing one.
